Any time I find bbq slathered in sauce, it's a clear sign they are trying to hid something. If you are going to spend 14 hours smoking a beautiful piece of meat, there should be no reason to hid it in sauce. This is why I love Big Nate's because they let their bbq do the talking. If you do enjoy some sauce with your meal, they have a bunch of homemade sauces you can choose from and even a homemade pickle bar where you will find traditional pickles, pickled onions and pickled jalapeños.
