Dilla Libre is one of Phoenix's most exciting and innovative eateries, known for its quesadillas, tacos, and margaritas. With a playful and creative approach, their menu offers something for everyone—from meat lovers to vegan enthusiasts. Their emphasis on bold, vibrant flavors sets Dilla Libre apart, creating a memorable dining experience for all who visit.
I was excited to learn that Dilla Libre has won a ton of awards over the years, including Best Margarita (2022-23), Best Taco (2022-23) and Best Quesadilla (2021-2023), along with a bunch of other awards. It goes to show you how unique this place is and how good the food and drinks are too!
They have some great appetizers to start your meal off with like their Guacamole and Queso, Elote, and some delicious "Blue Demon Cauliflower Bites". I like how they keep their drink menu simple and don't overcomplicate good classic drinks. I tried the Dragon's Blood Margartia and a Classic, both were delicious and really refreshing.
Their main menu is filled with inventive creations like their Banh Mi Tacos, filled with carnitas, pickled veggies, cucumbers serranos, maggi aioli, thai basil, mint & cilantro. That is no simple taco either, but it's packed with a lot of flavor. Now what is really unique is you can find this same taco as a Vegan option too, the carnitas replaced with a chickpea chorizo, that really makes a great alternative to this taco.
The quesadillas here...let's just say I now know why they won those awards! I got to try two of their most popular, the Napoleon Dynamite, which is filled with carne asada and of course tater tots, and the Chupacabra, which has a citrus marinated chicken inside. Not only were both of these delicious, even with all the fillings they are stuffed with, they hold up really well. You ever get a quesadilla that gets super soggy after a few minutes? Not these, as the tortillas they use not only hold up, but the quesadillas are given a crispy cheese coating that gives it that extra special "crunch". Another unique aspect is every quesadilla option can also be turned into a burrito or bowl as well.
But it’s not just about meat here, Dilla Libre's commitment to catering to all types of eaters is evident in their expansive Vegan Menu. When I was looking over the menu, I went to flip to the other side, thinking there were more options, and there were. They have an entire vegan menu, taking almost every option you see on their main menu and creating a vegan alternative option for it. While I am not vegan myself, I really like how Dilla Libre has gone the extra mile to create an entire vegan menu for their customers. Most places might have 1 or 2 vegan options, but not an entire menu. As a foodie, I always appreciate good food too. I did try the Vegan Banh Mi Tacos, with that chickpea chorizo, and they were just as good as the original tacos. If you are looking for top quality vegan options, this has to be on your list to try!
