One of my favorite things to do at the end of the week is go through my fridge and find creative ways to use up any leftover ingredients. I hate wasting food, so this Leftover Salsa is the perfect way to turn odds and ends into something fresh, flavorful, and delicious. It’s a simple, no-cook recipe that comes together in minutes and pairs perfectly with chips, tacos, or even grilled proteins.


This week’s version includes half of a red onion, leftover corn and black beans, a roma tomato, an heirloom tomato, an avocado, and some green onion, all tied together with a simple yet flavorful dressing.

Ingredients


  • 1/2 red onion, diced
  • 1 roma tomato, diced
  • 1 heirloom tomato, diced
  • 1 avocado, diced
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/2 cup black beans, drained and rinsed
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 tsp honey


Instructions


  1. In a medium bowl, combine the diced red onion, roma tomato, heirloom tomato, avocado, corn, black beans, and green onion.
  2. Drizzle with olive oil and add the garlic powder, salt, pepper, and honey.
  3. Gently mix everything together until well combined.
  4. Taste and adjust seasoning as needed.
  5. Serve immediately with chips, tacos, or as a topping for grilled chicken or fish.
